He served as a ship's surgeon during his Navy service, and then completed a residency in internal medicine at Bellevue Hospital Center. While attending medical school, he worked as a research assistant to Dr. Lewis Thomas, the noted biochemist and author best known for his books The Lives of a Cell and The Medusa and the Snail.

In 1960 Dr. Loeb joined the staff of what is now Columbia Presbyterian Medical Center as an associate physician. In 1968 he left private practice to become director of research services at Columbia-Presbyterian Medical Center, where he remained until 1974.

In 1970 Dr. Loeb founded the Institute for Applied Psychophysiology and Biofeedback (now known as The Institute for Psychophysiological Research). He is a frequent lecturer on psychophysiology and biofeedback throughout the world and has spoken at many universities and conferences on topics such as stress management, biofeedback, hypnosis, alcoholism, eating disorders, anxiety disorders, depression, pain management, hypertension, weight loss programs, muscle relaxation techniques, smoking cessation programs, etc..
